Mushrooms such as reishi, shiitake and maitake have compounds in them that are excellent for boosting immunity.
These compounds help protect us from bacterial and viral infections and provide immune support.
This mushroom soup is perfect on a cold day when your immunity needs a little TLC.
Ingredients
1 tablespoon virgin coconut oil
1 large onion, diced
2 cloves garlic or more, chopped finely
1.5 cup of reishi, shiitake or maitake mushrooms, or combination
2 cups of either swiss brown mushrooms, portobello or button mushrooms
6 sprigs of fresh thyme
1 fresh chilli or more, chopped
Enough vegetable stock to cover vegetables
Method
Melt coconut oil over heat and add finely diced onion and sauté til translucent.
Add garlic and sauté for 1 minute
Add in chopped mushrooms and sauté for 1 – 2 minutes to soften slightly and bring out flavour.
Add in thyme then pour the vegetable stock to cover mushrooms.
Simmer for 5 minutes or until mushrooms become tender.
Once cooked, you can leave it as is, or if you prefer a creamier consistency then use a stick blender to pulverise the soup for 1 minute.
